Crockpot meatball experiment number one! Was looking for a good way to "use up" some ground turkey meat we had in the freezer - so meatballs it is! and as you know anything that can be cooked in a crockpot to me is a WIN! - I did some research of various recipes and kind combined different ingredients from two different blogs to put these together! They were inspired by www.sallysbakingaddiction.com and also - www.bakedbynature.com as they always feature awesome recipes! Alright I won't keep you waiting..I'll get to the food! Crockpot MeatballsFirst up...gather your ingredients! grab these things PLUS two 28 oz cans of crushed tomatoes! I liked the ones with basil added. Did you like how there are GREENS snuck into this list??? Important to note: after shredding the zucchini SQUEEZE SQUEEZE and SQUEEZE some more to get all of the water out of it! I did this paper towels - but you could also do this with a cheese cloth or other thin towel. I used TWO eggs, but I say one to two because the mixture was extremely sticky. So that is normal! Combine all the ingredients and if it is NOT sticking together add the extra egg! To mix together I used my hands in a large mixing bowl - a spatula would work also! For the seasonings feel free to use whatever you have on hand! Some ideas include: extra basil, italian seasoning, grated parmesan cheese, cayenne, crushed red pepper or whatever else floats your boat. I also think you would be able to sneak in some grated carrots as well! Once your mixture is combined do your best to form balls! Like i said the mixture is very sticky and so mine definitely didn't form into perfect ball shapes - can't be perfect right? (otherwise they wouldn't be homemade!) In a saute pan over medium heat heat up 1 Tablespoon of olive oil. Add "balls" to the hot pan and sear each side for about 45 seconds each side - before adding to the crockpot. Repeat with all. Once all in the crockpot cover with two- 28 oz cans of crushed tomatoes.
You could definitely add additional seasonings or veggies to the sauce if you choose. I think mushrooms and onions would great! Cover the crockpot and cook on low for about 3-4 hours. Serve on subs, noodles, zoodles or just with a fork. Eat up and Enjoy! Has anyone tried crockpot meatballs? - Boyfriend feedback: "meat balls are meant to be red - but they tasted fine" haha! Am going to try making them with ground venison next time!
