It's pumpkin season and I seriously want THESE for every meal! I'm not kidding when I say they are just as amazing as they look!! SIMPLE to make. HEALTHY and DELICIOUS! How much more could you want or need?
Protein Pumpkin Pancakes
Just a few ingredients and these babies are all yours! I topped my pancakes with chopped dark chocolate chips, extra cinnamon and a tad of light syrup! Would also be AMAZING with peanut butter, sun butter or anything really...
Can we just look at how PUFFY and light they are?? And with these clean ingredients go ahead and indulge!
1 scoop vanilla shakeology (chocolate would be great too!)
1/4 cup pure pumpkin
1/4 cup liquid egg whites
1/2 t baking powder
1/2 packet of stevia
Sprinkles of cinnamon
Sprinkles of pumpkin pie spice
Mix all ingredients until JUST mixed! (key to fluffiness)
Cook like you would any other pancakes! I have noticed that lower and slower is better - but its so hard to be patient!
Top with your choice of topping and enjoy!!
