If you know me at all you know I have to have my three morning essentials at breakfast time: coffee (duh), PEANUT BUTTER and banana! I'm probably known as the banana lady at the grocery store as I'm ALWAYS there to get fresh ones! I just CAN'T eat them with any speckles...ish.
My go-to breakfast for what seems like forever has been: toast with nut butter and banana - don't forget the leftover banana on the side with extra peanut butter. I swear NOTHING goes better with coffee.... (hey! Whatever gets you up in the morning, right???)
After taking a good look at my nutrition I've noticed that I'm really been a slacker on my protein! Sure I seem to get it in at lunch and supper time but breakfast there is a really big gap! After brainstorming and refusing to give up my peanut butter and banana obsession I decided to get creative... hey - what's the worst thing that could happen!?
And I'm so glad this DID happen! When I think of a crepe I think of something fancy..like from France or something. To be perfectly honest I don't even know if I've had a real crepe before... so maybe this doesn't even count! Buuuttt I'm gonna go with it. Please welcome to my breakfast: Easy "Protein Crêpes" - my topping of choice? Peanut butter and banana! (no surprise there) They take about four minutes to make (which is awesome) and feel free to top with WHATEVER you would like! Maybe they sound weird to you - but seriously I dare you to give them a whirl -
Coconut oil to melt in the pan
1/2 cup of egg whites (I use a carton)
Melt a dab of coconut in a pan just enough so your egg will not stick! (makes a much easier clean up!)
Once pan is heated through on medium heat add 1/2 cup egg whites and cook, flipping when ready. When cook through flop on a plate and top as you please! I enjoy banana, peanut butter or sun butter and sprinkled with cinnamon! Best served with hot coffee (in my humble opinion!
