Pretty excited to combine my favorite things: freezer meals AND a crockpot! It's fall and its time for the kids to head back to school: more activities and more responsibilities! This can make eating healthy super difficult unless you are prepared AND make it a priority! Freezer to crockpot meals to the rescue! It requires simple preparation, simple ingredients so that once your meals are frozen all you have to do is thaw in the fridge overnight then throw in the crockpot in the morning as you head off to work!
Set it and forget it. Easy. Simple. Healthy. Delicious.

Crockpot to Freezer - Turkey Sloppy Joes
First of all gather your ingredients and measure out! Actually ends up SAVING time!
The original recipe for these crockpot Sloppy Joe comes from The Crockpot Sisters - seriously check out their awesome site for more inspiration! I have changed some of the spices, amount of added sugar and changed the vegetables according to my own tastes - feel free to make it your own too!
2 lbs lean ground turkey
1 small onion chopped
1 red or yellow bell pepper chopped
1 can green chiles
1 cup ketchup
10 3/4 oz tomato soup
3 T Sweet Dijon Mustard
1.5 T brown sugar
2 t black pepper
I actually got these packages of ground turkey from Costco! I paid about $17 for FOUR individual packets - (which were each about 2 lbs each) - I kept two packages out for the prep and popped two in the freezer for later meals.
Let's "get to work" shall we?
Brown the ground turkey and drain. Pat dry with paper towels and set aside. Sauté chopped onion and peppers in a pan for about 2 minutes until partly soft. Add turkey back to the pan and stir until mixed well.
In a separate bowl combine: ketchup, Chiles, tomato soup, mustard, brown sugar and pepper. Mix well.
Add the turkey and veggie mixture to a gallon size freezer Ziploc bag. Next add the tomato mixture. Seal tightly without air and mash to combine all the ingredients in the bag. Freeze flat in a 9x13 pan.
The night before you plan on eating it, place bag flat in the fridge. In the morning add the thawed ingredients to the crockpot. Set crockpot to low for four hours. Enjoy!
