Flashback to last weekend - B's family's cabin is near the city that my good friend and fellow coach Jana lives in! It was a rainy and windy day (weird how it never fails to happen on Memorial Day at the lake!) We met up for coffee and a good chat! Seriously so grateful for my coaching team and their support in just LIFE!
Nurse and Coach life - ok so not quite but seriously this week was INSANE - We actually set a RECORD for the most OR cases in one day at our facility. I feel like this entire week EVERY SINGLE shift was insane for us all! I'm a definite empath and these weeks have a definite effect on my mental health - Don't know what an empath is? Read about it HERE I definitely feel like I feel other people's pain, stress, happiness and I feed off of their energy. This is a blessing and a curse. To be honest at the end of every single shift I felt absolutely drained - but still SO THANKFUL and grateful for the team that I work with - Our 2nd floor family rocked out the busy days!
On the coaching front ... It's a new month! LOVE that. New clients getting ready to start in my health group next week that focuses on being active, workouts you can do or take anywhere (all levels), daily smoothies for superfood nutrition and a supportive community all within an app! Can't believe it's almost a month until our coaching trip to New Orleans! So excited to be all together and explore this awesome city! Have you ever been?
On the Home Front - stress is the key word around here and so we thought a trip to the lake with the boat, fishing rods and intent to catch some giant bluegills! Apparently it is about the time they usually spawn so they are great for catching! Long story short:
1. We didn't get to fish
2. The truck got a black eye
3. The jetski also wouldn't start
but hey! We got to see my parents, have a few drinks, got the beach cleaned, the dock and lifts in the lake and we went to JL Beers for supper! I'll let you drool over this...
In Food Matters... speaking of food I did quite a bit of food prep! Yay me! Last Tuesday I made...
1. Protein peanut butter balls
2. Egg wraps for B and I for breakfast
3. Protein crepes
4. Roasted potatoes (sweet potatoes and russet potatoes)
5. Cheeseburger casserole
6. Shrimp for shrimp tacos
7. Sloppy Joes
This casserole was a hit! It lasted us all week and I even brought some to my parents for them to try. Definitely freezable too. Can't wait to share the recipe with my new clients! I'm telling you you need to join in!
These egg wraps are so easy but so great! All you do is whisk an egg and cook slowly in a sprayed pan. Flip carefully when the first side is cooked! Add whatever you want to the middle! I did ham, cheese and onions and then roll it up! You could totally do a sweet one too and add cinnamon and peanut butter and bananas I'm sure too.
I love sloppy joes...Why don't I make them more often. I especially love kettle chips to scoop it up or served on sweet potatoes! SO MUCH YUM! Don't forget extra onions in mine! How do you like yours?
I seriously loved these shrimp tacos! I picked up some "cilantro lime shrimp" that I found in the deli at Costco and they were PERFECT for these! The slaw is based on THIS RECIPE
How I layered them:
"extra fluffy" mission small tortilla for the base (I don't care for corn ones!
chopped onions, tomatoes and jalapenos
heated up the shrimp in a saute pan and melted daiya non-dairy cheese on top
drizzled with siracha and ranch
Messy, but worth it.
Still obsessing over Joseph's pitas and will stuff them with anything I have on hand! I believe this one was rotisserie chicken and stir fried veggies! Do yourself a favor and GET THESE!

1/2 cup non dairy milk
1/2 T SF FF cheesecake pudding mix
ice to blend
top with protein balls and layer them in there too for extra awesomeness!
Stopped for gas after work the other day and I was HANGRY! Was about to grab a protein bar when I saw these. Holy smokes these are amazing. Does anyone know where I can get them in bulk? They also have bison ones but those were cranberry flavored and I'm not sure how I feel about cranberries in my bison...
Monday - rest day
Tuesday- Long run of 6.4 miles - the most I have done in months and it felt great! My goal is to incorporate one "longish" run each week!
Wednesday - nurselife
Thursday - nurselife
Friday - nurselife
Saturday - 4 miles + lifting circuit with moves from Hammer and Chisel
Sunday - 3.5 miles + total body circuit with moves from 21 day fix extreme
A lot of weeks or in the past I would feel like a failure/loser for "not working out" for three days in a row. Um...I worked like CRAZY during work and being on my feet around 9 hours. Plus I was very active at home too! Yard work, around the house cleaning, etc. EVERY MOVEMENT MATTERS! This week I plan on getting another "longish" run in - my goal is 5-6 miles in length. I am making it a priority for two strength training workouts and already have an on demand workout with a friend!

I already whipped up the dressing for this house salad! Can't wait to try it!
