wow it's almost been a full week since I have been on the blog so I think it's MORE than time to do a recap and take a look at what I've been up to this week!
Thinking out Loud
proof that I (sometimes) wear real clothes - other than sweats and workout clothes...Speaking of workout clothes I'm in the market for new leggings/capris...who has some favs for me?
Just started this new read and I'm loving it so far. It's refreshing to see a celebrity like Cameron Diaz take part in a book like this that addresses loving your body and it truly takes a look at the whole picture. It breaks down nutrition in a nerdy science way - bringing me back to j-high science class...cells and all! Also included is fitness, self love and truly looking at how amazing our bodies are! So much of social media focuses on diets, macros, showing us what our bodies are "supposed" to look like and I'm not going to lie...it's HARD sometimes not to compare ourselves to others. Are our abs showing? Are we too scrawny? Are we too fat? Are our thighs too big? Arms flabby? - all that NEGATIVITY that can own us if we let us...and SELF LOVE is something that we all can work on ... and recognize how amazing we truly are. Inside and out!
Went through a zucchini obsession this week. All I did was slice a small/medium zucchini (I would guess about 1/4 inch thick?) - I sprayed a saute pan with pam and laid my zucchini on the pan - I then seasoned the zucchini with garlic powder, flavor gods pizza seasoning and turned the burner to medium/high - cook on each side for about 3 minutes or so and feel free to season with what you prefer! I would recommend to NOT cook them too long otherwise they get mushy! - They are so good on the side of a main course or topped with melty cheese and a protein (nacho style!) -
TEven though this week has been much colder...I'm still digging the cold press/cold brew coffees! I love Starbucks and their cold brew but I'm in love with our local coffee shop called Beans! Their cold press is really good and I love that they also have almond milk AND I recently discovered Macadamia nut milk they have there! Have you ever had it? It's creamier than almond milk and dairy free (yay!) They don't open til 6 am and so it was the bux drive thru - I think I deserved it after that early morning hustle! This was my work and workout schedule this week:
Monday - worked admitting lead 4:30 am to 1 pm= REST DAY! B returned from his fishing trip in Canada and I was so excited for him to get home!
Tuesday - 5:30 am to 2 pm so I went to the gym after work. It's not always easy that is for sure! But I ran home and put a few thing away, chugged my energize pre workout and then went to the gym for a short shakeout run! About 3 miles and then did some stretching and a quick ab workout!
Wednesday - 6:00 am to 2:30 pm - I hit the gym EARLY. I made it there by 4:30 - did a quick HIIT run to warm up and then did a weight circuit that I made up! The moves come from a combination of many of the beachbody workouts I have done in the past! (Core de Force, 21 Day Fix, 21 Day Fix Extreme and Hammer and Chisel are a few I have picked up ideas to put together the weight circuits!) These workouts have taught me so much about form! I used to be ABSOLUTELY clueless about where to even START in the weight room. I would walk in and do a few lunges and leave feeling intimidated and lost...Having an idea of what your doing makes such a difference - being efficient with your time and not to mention learning how to lift SAFELY so you don't end up HURTING yourself!
Here is one for you to give a go! Do each set of 3 moves each 3 times before moving on to the next set - It should take you about 30 minutes to get through it. Let me know how it goes for you! It definitely made me sore!
Thursday - I did MMA Speed workout from Core de Force at home! It is an awesome workout that flies by and is a good combination of cardio and strength and it is ONLY 27 minutes! (thats with warmup and cool down) I also did a 5 minute ab workout called Core on the Floor while my coffee brewed! I worked 9:00-5:30 this day and it was nice not to have to leave the house before going to work.
Friday - my day off..yay! It was a BUSY week at work this week and we all definitely ran around like crazy taking care of patients to keep the flow going! I COULD have slept in today, but was awake on and off since 4:00 am - I guess that is what you get when the other days of the week you are up so early...your body just starts to adapt! Oh well! I got up at about 6:00 am - enjoyed some coffee , candles and personal development reading. Besides The Body Book I'm also reading Present Over Perfect. It's such a good reminder of being PRESENT ...and I NEED that reminder..especially since I am what I call myself a recovering perfectionist! I had a vegan chocolate shakeology pancake for breakfast and hit up the gym around 10 am! -
My workout was a 21 minute run (doing some intervals of jogging and mixing in some sprints) - I got in ALMOST 3 miles in a short period of time and it got the legs warm! Then I hit the weights to do another made up circuit! I have a feeling I'm going to be sore tomorrow...especially in the booty and hamstrings!
Picked up another cold press java from Beans and had them add "light macadamia milk" - so pretty right? The white settles at the bottom and I get an outrageous amount of happiness by stirring it in... ha!
I had to share these with you! So March is National Colon Cancer Awareness Month! To shout out our fellow nurses on the endoscopy unit who put up with so much crap (haha) I made some cupcakes for them from us on the PACU/Day Surgery team. I have to admit I was seriously laughing out loud while I was frosting them with the poop emojis - don't those eyeballs kill you? Don't mind me...Just a turd on a cupcake. HA!
Speaking of baking...I made these on St. Patty's Day...and YES they were delish! I took the funfetti donut recipe from www.sallysbakingaddiction.com and added some food coloring and whipped them up in no time! Then the glaze and topped with a few lucky charms. Yes I'm a toddler and HAD to buy lucky charms cereal the other day...I have NO idea why...but they looked so good..sometimes you just gotta!
Totally forgot to post this last week but I think these turned out pretty good! For B's fishing trip I prepped some breakfast sandwiches! They were made up of english muffins, eggs, cheese and canadian bacon. How I did it...
In a SPRAYED muffin I cracked an egg into 6 of the holes and baked at 350 for about 15 minutes (or until eggs are set) then popped them out onto a cooling rack and let the eggs COMPLETELY cool off
After cooling I added the egg, cheese and canadian bacon to the sliced english muffins.
I toasted the sandwiches in a saute pan on the stove top JUST enough for each side to brown
Again I let them cool - After cool I stuck them in the freezer! After chilling in there for a while I wrapped them each in saran wrap -
I took my time and probably took a few extra steps because I didn't want them to get soggy! -

Some of the eats from this week: - sauteed zucchini and steamed broccoli!
Quick tip: make more than you need for a meal and store in the fridge for other meals. Doesn't take any more time but saves you time later on!
this salmon though.... B's uncle lives in Alaska and they do a fish/goods exchange per mail and we have some of this BEAUTIFUL and delish red salmon to use up! I thawed it and rubbed it with a drizzle of maple syrup, garlic and low sodium soy sauce - I baked it at 450 for about 20 minutes and it was perfection: flakey and tender! Do you make salmon? How do you like to make yours?
Still digging the chopped salads! This one had sweet kale salad mix and asian cashew salad mix (greens only of both), broccoli, shredded buffalo chicken and spicy cayenne chick peas! Have you tried these before? They were a random Homegoods find and make for a good crunch! And you all know how much I love spicy!
