hey there - it's been far too long since I have posted a recap! So here we go!
Life Lately in Travel & Eats
We recently went up to the area of Lutsen, MN! It's right on Lake Superior and a BEAUTIFUL part of the state of MN! The only downfall is the LOOOONNGG drive as it took us nearly 7 hours to get there! But we made it. We spent three nights in a townhome with two other couples staying at a resort there. There was SO MUCH to do! It was COLD, but we bundled up and checked out some trails and did some snowshoeing even in negative temps!
Here we are all bundled up! It was a good workout too with all the hills! And we saw some beautiful frozen waterfalls with some IMPRESSIVE icicles. And even thought it was cold out it really didn't feel that bad when we were sheltered from the wind!
We even did some ice skating - which I hadn't done since like JUNIOR HIGH! I was terrible, but I think with some more practice I could get it down again! Ice skating was MUCH colder!
The night we got to the resort we decided to bundle up and make our way to the hot tub. They DID have an outdoor hot tub (which the boys DID end up trying) but I definitely did not....the temp was -5!
Our lodge had a shuttle to a local winery/cider brewery so we decided to go check it out. We went to North Shore winery and they were great hosts. We tried a variety of wines and we did a cider tour too
Even B tried wine! It definitely isn't his favorite, but he even tried the reds!
This was our favorite cider beer.
I thought it was amazing to see all the barrels where they store the wine. The barrels are made of oak and the wine absorbs its flavor over time. One of the wines take a YEAR to make so it comes out in a limited batch each year. So specialized and makes you appreciate it all the more!
That same night the lodge's grill was hosting the Castle Danger brewery. No we weren't ALL about the alcohol...but I'm sure we had our share. The boys enjoyed visiting with the brewers and drinking their beer and even took home a growler. While the boys drank beer and had some man talk us girls had a cocktail and caught up on life too!
This was the view from our living room in the condo - Saturday was SUCH a clear day and made for a gorgeous view.
How beautiful is Lake Superior...
I would never complain about drinking coffee with this view every morning.
Our condo had a kitchen and Alyssa did an awesome job with meal planning and cooking for us! She had so many Trader Joe's items and I DEFINITELY need to make another trip down there!
Breakfast is ALWAYS my favorite meal - sprouted bread toasted with peanut butter, sauteed veggies and scrambled eggs. All the peanut butter AND on my eggs. Don't knock it until you try it.
This is completely random but I LOVED these as a child and can NEVER find them anywhere! I seriously remember eating the ENTIRE bag in one sitting. haha! They are just as good as I remember, but they are SO sweet! Have you had these before?
We stopped at Subway on the drive there and back. I LOVE their chopped salads! This one was spinach, steak, olive, banana peppers, green peppers, jalapenos, cucumbers, tomatoes, onions and spicy mustard and southwest sauce.
Since getting home I missed cooking so I have been doing more of that this week! I roasted a big batch of broccoli and cauliflower. Unfortunately my gut issues were in a flair Monday and Tuesday, so eating that was out of the question. When I'm having all the cramps any type of roughage is out of the question. B loved broccoli with "fake cheese" melted on it.. aka velveeta.
Venison steak seasoned with Trader Joe's chili lime seasoning and extra pepper! I just sliced it and sauteed it in a pan and served with potatoes and veggies.
I found some pre-spiralized zucchini at Target! I decided to try it! It came with some italian seasoning. I heated up some olive oil, added the zucchini and then I topped it with some garlic roasted hummus that stirred right in. Have you ever done that? SO GOOD! For B's I stirred in some chive and onion cream cheese!
I have been back on my squash kick! I picked up some frozen from costco and have been making them in big batches by sauteing them on the stove top.
Baked chicken! Made a big batch so we could eat throughout the week. I know it's boring, but I really do love chicken.
I LOVE the kirkland nacho tortilla chips from Costco. WAY better than doritos. SERIOUSLY! my own nachos: chips topped with chicken, spinach, cilantro, go veggie cheese, onions and jicama. Just put it all in the oven on the plate at 400 degrees for a couple minutes until the cheese melted!
Random meal where I paired together: zucchini, butternut squash with go veggie cheese, chicken and shrimp!

Cilantro Lime Shrimp from Costco on a tortilla - so easy and delish! I found the shrimp in the deli section.

My muscles have been SO SO SORE but my chocolate recovery drink has been a LIFESAVER and you can drink it as hot chocolate. That's a definite win.
