Time for Friday Favorites - a few of the things that i'm LOVING lately!! Can't wait to hear what YOU are loving this week too!
I get asked frequently what my "typical" day looks like as a full time nurse and also a health and fitness coach - so here we go! My shifts vary quite a bit so no day really is "the same" but I thought I would share an example of my daily "grind" - which I don't consider a grind when I truly love what I do
So excited that it is GARDEN SEASON. I seriously LOVE all the fresh produce and of COURSE I have to try to grow my own too. I've planted peppers (jalapeno and green), tomatoes (two types of cherry and roma), basil, spinach, romaine, egg plant, peas, onions and zucchini!
Which brings me into tonight's meal.. ZOODLES! Have you gotten yourself a spiralizer yet? If not..what the heck are you waiting for? Turning veggies into noodles is fun...and SO delish! The one I have is called a "veggetti" - goofy name and inexpensive, but it works wonderfully.
Here is a quick meal you can make in under 20 minutes! Packed with protein, lots of greens and is customizable to use up all the produce and meat in the fridge...enjoy!
