Happy New Year to you all! Tis the week of New Years Resolutions, goal setting and once again searching for some healthy recipes - because we all know "this will be the year" - well this year I really DO want to help YOU (yes you) make that happen!)
To get you started I'm sharing a creative way to use up leftovers are your house - in this case it was roasted sweet potatoes, shredded crockpot chicken and random veggies. Feel free to use what you have on hand! Would love to see what you come up with - hashtag it #fitwithheart - can't wait to see your nacho creations!
Sweet Potato Nachoes
Here are the ingredients I gathered for creating my "nachos"
- Roasted Sweet Potatoes
- Shredded Crockpot Chicken
- Peppers (chopped)
- Onions (chopped)
- Mushrooms (previously steamed)
- Spicy Bean Dip (Trader Joe's brand) Siracha, Crushed Red Pepper & Salsa
Other great ideas: tomatoes, avocado, beans, sour cream/Greek yogurt, taco sauce, all the veggies
You really can't go wrong with anything!
Start Layering - beginning with the sweet potatoes and chicken and pile it high.
