What's that you say? - It's too HOT to use a crockpot? NO WAY! Summers are filled with activities and always being on the go crockpots are the best to "set it and forget it" in the morning and come home to an amazing meal that is ready for you! One of my favorite things to do with my crockpot is to prep my protein for the week! Having something already made that is versatile is so awesome to have around... that way you always have something to pack in lunches, add to sides or easy to heat up for a quick supper before you are off to another game with the kids.
Shredded Chicken is one of my favorite crockpot meats! So versatile. So easy. And most of all so delicious. Trying out some new flavors this week and I think I came out with a winner!
Let's get started, shall we?
Southwest Garlic and Lime Crockpot Chicken
Makes: 4 servings
Time: 15 minutes to prep; 4-6 hours to cook
What you'll need:
- 4 large boneless skinless chicken breasts (frozen is OK)
- half of a juicy, fresh lime
- Chipotle seasoning - I used this salt free market pantry brand
- Minced Garlic
- 1 cup of water (or low sodium chicken broth)
- 1/2 of an onion chopped (feel free to add any other veggies!)
Nutrition: 1 red (per chicken breast) 1 green (depending on the amount of veggies you use!)
Place frozen chicken breasts on a plate. Cut off remaining fat as necessary. (ewwww...I hate the white stretchy stuff on my chicken!) This is easiest done when chicken is still cold and or slightly frozen. Please be careful! Thoroughly coat each piece of chicken in chipotle seasoning, pepper and minced garlic then layer in the bottom of the crockpot. Squeeze half of a lime over the chicken breasts. At this time add your onions and any other vegetables of your choice! I think a variety of peppers would be a delicious option! Pour the water (or broth if that is what you choose) over the chicken and put the lid on the crockpot. Set on High for four hours to six hours depending on whether or not you are using frozen chicken breasts.
As it cooks it will fill your place with wonderful aromas. Set it in the morning and come home to a meal ready to go. The tender, shredded chicken can be served in various ways and is an EASY way to get your protein in!
Serving suggestions: wrap, whole grain tortilla, on a salad or with whole grain rice or quinoa (1 yellow container)
