Time to get started!
I used oat flour for this recipe! Don't panic - you can easily make your own just by blending oats in a food processor or blender until a flour like texture is achieved. This literally takes all of ten seconds... In a bowl get to mixing! Careful - Don't overmix or you will end up with flat cakes. No one wants that! Mmmmm....Chocolate.... ![]()
Ok now its time to cook them!
Heat up a pan of the stove and use either a light cooking spray or a small amount of oil in your pan to prevent the cakes from sticking. I really like coconut oil! But really - it is totally up to you. Once the pan is hot - form your pancakes! Make them as thick, big, small as you wish. You could even make shapes! (the kids would love it) You can see I should have used a bigger pan - mine ended up as one big pancake! #sorrynotsorry ... When you start to see your pancakes start to puff and get bubbly... flip them! I like my pancakes just a light golden color.
Chocolate Shakeology Protein Pancakes (serves 1 - makes about 3 - 3 inch pancakes)
1/8 scoop oats blended into oat flour 1/2 scoop chocolate Shakeology 1/3 cup egg whites OR 2 large egg whites 1/2 t vanilla Stevia drops/sweetener 1 t baking powder Blend your oats In food processor or blender until a flour consistency is achieved (takes like 10 seconds) Dump into a bowl and add the Shakeology, egg whites, sweetener and vanilla. I used about 7 drops of Stevia to sweeten and this is optional! All depends on your taste! Mix these ingredients until just combined. Add baking powder and stir until just combined. Careful not to over stir. Batter should have brownie batter like appearance. Heat up your skillet and use coconut oil or other oil to make sure pancakes aren't going to stick to the pan! (not much is needed) - Make your pancakes flipping when they start to get bubbly and puffy. Topping ideas! I love peanut butter and banana! Add syrup, fruit or WHATEVER your heart desires! *This recipe can easily be doubled so that you can share with a friend, save for later or simply eat more of them :)
