If you know me at all you know I have to have my three morning essentials at breakfast time: coffee (duh), PEANUT BUTTER and banana! I'm probably known as the banana lady at the grocery store as I'm ALWAYS there to get fresh ones! I just CAN'T eat them with any speckles...ish.
My go-to breakfast for what seems like forever has been: toast with nut butter and banana - don't forget the leftover banana on the side with extra peanut butter. I swear NOTHING goes better with coffee.... (hey! Whatever gets you up in the morning, right???)
After taking a good look at my nutrition I've noticed that I'm really been a slacker on my protein! Sure I seem to get it in at lunch and supper time but breakfast there is a really big gap! After brainstorming and refusing to give up my peanut butter and banana obsession I decided to get creative... hey - what's the worst thing that could happen!?
What's that you say? - It's too HOT to use a crockpot? NO WAY! Summers are filled with activities and always being on the go crockpots are the best to "set it and forget it" in the morning and come home to an amazing meal that is ready for you! One of my favorite things to do with my crockpot is to prep my protein for the week! Having something already made that is versatile is so awesome to have around... that way you always have something to pack in lunches, add to sides or easy to heat up for a quick supper before you are off to another game with the kids.
Shredded Chicken is one of my favorite crockpot meats! So versatile. So easy. And most of all so delicious. Trying out some new flavors this week and I think I came out with a winner!
