Crockpot meatball experiment number one! Was looking for a good way to "use up" some ground turkey meat we had in the freezer - so meatballs it is! and as you know anything that can be cooked in a crockpot to me is a WIN! - I did some research of various recipes and kind combined different ingredients from two different blogs to put these together! They were inspired by www.sallysbakingaddiction.com and also - www.bakedbynature.com as they always feature awesome recipes!

Honestly I don't even know if this counts as an actual RECIPE, but I got a bunch of questions as to how I recently made this stir fry and rice, so I guess I'll share the process with you!
I honestly LOVE stir fry of any kind - for MANY reasons. It's so versatile allowing you to use whatever you have on hand. It fits whatever lifestyle - whether you have specific nutrition needs such as vegetarian, vegan, etc. You can make it spicy, not spicy, sweeter, more veggies, more meat - basically you can adapt it to however you choose!

To get you started I'm sharing a creative way to use up leftovers are your house - in this case it was roasted sweet potatoes, shredded crockpot chicken and random veggies. I've been hosting a freezer to crockpot group on Facebook and it's been a lot of fun to share this meal prep strategy with others. Having these meals ready to go in the freezer just to thaw and add to the crockpot is seriously GENIUS.

So how do you prepare a freezer to crockpot meal?
It's pumpkin season and I seriously want THESE for every meal! I'm not kidding when I say they are just as amazing as they look!! SIMPLE to make. HEALTHY and DELICIOUS! How much more could you want or need?
Seriously you guys - are you NOT drooling looking at this picture! Pretty much sums up all the greatness of the fourth of July - minus the campfire! (But it tastes like a melty s'more in your mouth. Yup. S'mores party in your mouth!
If you know me at all you know I have to have my three morning essentials at breakfast time: coffee (duh), PEANUT BUTTER and banana! I'm probably known as the banana lady at the grocery store as I'm ALWAYS there to get fresh ones! I just CAN'T eat them with any speckles...ish.
My go-to breakfast for what seems like forever has been: toast with nut butter and banana - don't forget the leftover banana on the side with extra peanut butter. I swear NOTHING goes better with coffee.... (hey! Whatever gets you up in the morning, right???)
After taking a good look at my nutrition I've noticed that I'm really been a slacker on my protein! Sure I seem to get it in at lunch and supper time but breakfast there is a really big gap! After brainstorming and refusing to give up my peanut butter and banana obsession I decided to get creative... hey - what's the worst thing that could happen!?
What's that you say? - It's too HOT to use a crockpot? NO WAY! Summers are filled with activities and always being on the go crockpots are the best to "set it and forget it" in the morning and come home to an amazing meal that is ready for you! One of my favorite things to do with my crockpot is to prep my protein for the week! Having something already made that is versatile is so awesome to have around... that way you always have something to pack in lunches, add to sides or easy to heat up for a quick supper before you are off to another game with the kids.
Shredded Chicken is one of my favorite crockpot meats! So versatile. So easy. And most of all so delicious. Trying out some new flavors this week and I think I came out with a winner!

Who ISN'T a fan of quick and easy peasy meals in the summer - or YEAR ROUND for that matter? So many summer events, kids activities and what have you that meal prep can be a definite challenge! I'm a huge fan of breakfast. I seriously could probably eat breakfast foods for any meal of the day and be satisfied..
Sharing a recipe with you today that is so super easy I feel like it almost can't be counted as a recipe! It's super versatile and a great way to use up leftover veggies and meat. Great for breakfast or like I said..any meal of the day. ANNNDD it can be as healthy as you want to make it!
