Tis the harvest season! And I love it.... especially zucchini! Most people end up with them coming out of their ears... and I will take them with open arms! I love zucchini. Zucchini noodles, zucchini bread, zucchini brownies, zucchini muffins... bring it all on!
BUT unfortunately I don't always have the time or the need to make ALL of that at the same time! SO I decided to try my hand at freezing it I've done it before, but this time I tried a different method - portioned out my shredded zucchini in 1 cup packets making it extra convenient to thaw out just a cup at a time as needed for a recipe...
I'm sharing how I did it with you all because I have a feeling I'm not the ONLY one around here with extra zucchini!
Zucchini Prep! Not to be confused with bikini prep...
Don't let this little beast fool you - this was a serious arm workout! I suggest if you are going to be doing a lot of zucchini shredding get out the food processor!
Get started by peeling your zucchini with a veggie peeler and chopping off each end of the zucchini. Then gets to shredding! This grater has a bottom on it, but I still do the grating over a plate or bowl. Shred until you are left with just the middle/core of the zucchini - you don't want the seeds! (ew)
Be ready to have lots of paper towels on hand - because next you need to SQUEEZE SQUEEZE SQUEEZE! Get out the moisture! I took portions of the grated zucchini and wrapped in a paper towel and squeezed over this bowl. It's actually pretty amazing how much liquid is in this veggie!
JUST when you think you are done squeezing.... SQUEEZE some more. You really want all of the moisture out of the zucchini!

Repeat until you are finished! Then freeze.
This way you can take out 1 cup of zucchini at a time to use as needed!
