Conquering COSTCO - on a Sunday

YAY for shopping on the weekends! (said no one ever..) Yet I still do it when I have to! Fargo, ND may not seem like a big city, but with college kids back in town, Bison Football season up and running again - the weekends are a zoo.

Off to stock up at Costco to prep for the week - a few staples and trying a few new things too!

Here are my finds for the week!

Didn't get a TON as you can see, but still did manage to fill up the fridge, restock the pantry AND have the ingredients for one of my freezer to crockpot recipes! (more to come on that later)

BANANAS! Because all things bananas are delicious. When they get overripe I cut them into coins, put them in a freezer Ziploc and store for my smoothies and shakes! Also very handy to pull out of the fridge for banana bread. I am obsessed with bananas and HAVE to have the banana/nut butter combo on the daily.

Peppers! I got a six pack (haha) - 2 yellow, 2 orange and 2 red. All delicious just the same! I love adding chopped peppers to eggs, sandwiches, salads, stir fries and its going into a crockpot recipe this week too!

I've NEVER worked with ground turkey..can you believe it! But for a recipe I'm experimenting with - I'm going to give it a while! This was a great deal by the way. SIX pounds for $17.46. And it comes in four separate packages which easily can be frozen. So convenient!

These are one of my staples. SO GOOD so EASY and super convenient! See my "recipe" under recipe tabs for my protein "crêpes" - ever had egg whites topped with banana and peanut butter? I dare you.

Apparently I'm a little turkey crazy today - but this is another one of my staples. Also easy to freeze by the way! It is REAL turkey. Low Sodium. No nitrates. No added junk - just pure delish and super easy for on the go lunches. Plus can't go wrong with 60 calories in two thick slices and 13 grams of protein.

Such an amazing deal on sun butter - if you haven't tried sun butter DO IT NOW. Usually $5.99 at the grocery store for one jar... well I got TWO for around $8.59 I believe. It's stocked in my pantry!

What are your Costco or other bulk foods store staples? Any fun finds? Anyone daring to try peanut butter on your eggs?

I always love getting the Paisley Farms Bean Salad. It comes in jars and is great in salads, wraps, or just on its own!
