Tis the harvest season! And I love it.... especially zucchini! Most people end up with them coming out of their ears... and I will take them with open arms! I love zucchini. Zucchini noodles, zucchini bread, zucchini brownies, zucchini muffins... bring it all on!
BUT unfortunately I don't always have the time or the need to make ALL of that at the same time! SO I decided to try my hand at freezing it I've done it before, but this time I tried a different method - portioned out my shredded zucchini in 1 cup packets making it extra convenient to thaw out just a cup at a time as needed for a recipe...
I'm sharing how I did it with you all because I have a feeling I'm not the ONLY one around here with extra zucchini!
Pretty excited to combine my favorite things: freezer meals AND a crockpot! It's fall and its time for the kids to head back to school: more activities and more responsibilities! This can make eating healthy super difficult unless you are prepared AND make it a priority! Freezer to crockpot meals to the rescue! It requires simple preparation, simple ingredients so that once your meals are frozen all you have to do is thaw in the fridge overnight then throw in the crockpot in the morning as you head off to work!
Set it and forget it. Easy. Simple. Healthy. Delicious.
Well it's officially pumpkin season aka fall! At least according to caribou coffee & Starbucks .....everyone seems to be running out to get their PSL's! And if you don't know what that is well..I feel bad for you. I haven't had mine yet either! Oh well - I AM enjoying some pumpkin spice dunkin donuts ground coffee lately...yyyuuummm...
