Time for another What I Ate Wednesday! - well actually it's kinda what I ate TUESDAY - but you get the idea! - Hopefully it'll give you some meal inspiration and I can't wait to hear about what you've been loving lately in the kitchen!
What I Ate Wednesday
Breakfast is my FAV meal of the day - and I usually wake up starving! Not pictured here is the black coffee and peanut butter and almond butter that topped my Shakeology Protein Waffles!
Makes one serving and for my fixers I would count this as 1.5 red and .5 yellow
19 protein 12 carbs 3 fiber 2 fats and 137 calories total
here they are fully "dressed"
I was STARVING after my workout - 4 mile run and 21 Day Fix Extreme Plyo (gosh I have a love hate relationship with that one) Taking advantage of all the fresh and delish produce in the fridge and I've been loving making my kitchen sink salads! Put everything but the kitchen sink on your plate and all it salad...
this one had:
sweet kale chopped salad mix (Costco)
chopped cucumber (the mini ones also from Costco)
chopped grapes and some blueberries tossed in
herb roasted deli turkey (also Costco - are you seeing a trend?)
grape tomatoes chopped
made spicy by crushed red pepper and cayenne -
splashed with apple cider vinegar and drizzled with Walden Farms Chipotle Ranch and siracha
sprinkled with Nutritional Yeast
a T of Holyland Guacamole Hummus
Also tried out this energy drink for something new - not bad! sweetened with stevia and macros aren't bad either
A few pieces of dark chocolate and a Dove chocolate "dark chocolate mocha" - YUUUMMMMM..... - not pictured because it went down too fast...
Came home from the movie HUNGRY! Pita pizza for the win! This one i topped with:
daya cheese (dairy free)
drizzled with bolthouse ranch and buffalo sauce!
Seriously...SO GOOD. Go make this now! And all For my fixers it was:
1 yellow, 2 greens, 1 red, 1 blue and 1 dressing
Under 300 cals, almost 30 g protein, 11 net carbs
Bonus: it took 10 min to make...and about 2 minutes to eat.. ha!
Late night snack: a chocolate chip cookie the size of my head..because..um... BALANCE! YUM!
