This past Tuesday night I had the honor of attending an awards banquet for our hospital! It was the first annual awards banquet to recognize all of the nursing staff that have received awards throughout the year and ALSO for all those that were nominated for a yearly award. Amy (pictured above), myself and our peri-op Service Excellence team was nominated for the Innovation Award! It was fun to hear the winners announced, share in a pasta meal and drinks together, and just truly relish in what an AWESOME team we have at our hospital. I'm very proud of where I work!
Before the event I went to my friend Abby's to get ready! Nurses clean up pretty well don't we! Always love spending time with this beauty ... and time with her ALWAYS includes lots of laughs!
These warmer days (hello 80s! and YES it actually DOES get hot and sunny here in North Dakota!) have me craving a nightly cold treat! Some nights I have my favorite ice cream (Edy's brand cookie dough or vanilla bean) other nights I have this:
1/2 scoop vanilla Shakeology
1 tsp SF FF cheesecake pudding powder
1/2 cup non dairy milk
ice to thicken
Topped with a fiber one brownie - gosh I love those things...I know regular brownies are good too but there are all too convenient! haha
Thursday was my BIRTHDAY! Holy cow...HOW AM I 28? I feel like THIRTY is creeping in all too quickly! I spent most of the day at work, but came home early (tummy issues) and after a nap felt a bit better -
Brendan came home from work with these BEAUTIFUL flowers! No filter was needed to capture how gorgeous they are. So super colorful! He also showed up with TEN strawberry plants for us to put in! I'm really hoping they grow like crazy so that we end up with a lot of fresh berries!
He asked me what I wanted to do...and I told him to surprise me! We ended up going mini golfing - and I only lost by ONE POINT! (great improvement from my last golfing experience. haha!) We followed mini golfing by going out to eat at one of my favorite places to eat...Spit Fire! They have amazing rotisserie chicken and just pulled up to the restaurant you can smell the woodfire. I had a moscow mule, a club sandwich and fries! SO GOOD.
Food coma + being old = early bedtime for the birthday girl!
I know this probably looks gross but it is the FLUFFLIEST way to make oatmeal and I don't know why I waited so long to try it! I tend to go in spurts of breakfast favorites and got a bit burnt out on oatmeal. I'm REALLY trying to eat bigger meals and this definitely kept me full!
1 packet oat fit oats (maple and brown sugar flavor)
3/4 cup liquid egg whites from the carton
1/2 cup non dairy milk
Add all to a microwaveable bowl and microwave on high for 3 minutes! You will need to stop and stir every 90 seconds or so so it doesn't overflow. I added extra milk, cinnamon and a TON of peanut butter! Let me know if you try it!
Loving all the fresh asparagus this time of year! I'm a HUGE fan of this veggie - All I do is break the pieces down so that they fit into a bowl. Add a little bit of water and microwave on high for about 3 minutes or until they are soft, but not soggy. Add some butter, salt and pepper or parmesan (nutritional yeast for me) and eat up! Are you an asparagus fan?
I made this breakfast taco bake last week from www.iowagirleats.com and it was super good! I made the following changes: wheat tortilla vs corn (because I'm not a fan of corn tortillas!), Added extra eggs, used ground vension, and left out the cheese sauce. I topped part of it with daiya cheese for me and part of it with jalapeno velveeta for B! I think it turned out pretty good!
I also did some baking last weekend! Oatmeal chocolate chip cookies for the win. I seriously LOVE cookies...way better than cake in my opinion! It's definitely my dessert of choice! haha I pulled a whoops and ran out of oats so I added additional flour until it seemed to be the right consistency. Chilling the dough too always helps my cookies to come out puffy and thick vs flat and pancake like. I definitely approved this recipe!
Fellow coach Sarah Gaub posted this and I'm curious to try it! I love the starbucks passionfruit tea so I think her spin on it would be delish! Have you tried the Starbucks Pinkdrink? Or what is your favorite drink from there?
I'm seriously IN LOVE with this dress from Express! I'm pretty sure I don't NEED another dress...but I LOVE this one so much! Thoughts?
I ran across this photo on instagram and love it so much! I LOVE EVERYTHING about this kitchen and am now convinced that I need one of these old school signs! How fun is that? Anyone know where I can find one?
