This Week's Eats
On Monday night I made sloppy joes! I used the recipe from Ambitious Kitchen, but instead of turkey I used lean ground beef! Served with corn chips and a side salad.
Tuesday I had a TON of abdominal pain earlier in the day...and after a CT confirming I was so backed up...I needed something that was gentle on my tummy. I sauted up some kabocha squash from the freezer cooked in ghee! I sprinkled cinnamon on it and served it with a couple eggs and some turkey too.
This was from Sunday night I believe! Toast with turkey, an egg, go veggie american vegan cheese, bacon and guac!
We do breakfast for dinner quite a bit around here! This was 3 scrambled egg whites, one yolk with some sausage and veggies and melted go veggie cheese melted on top. Served with toasted english muffin, almond butter and cinnamon!
Due to my GI issues this week I have been told until I cleared my bowel to avoid grains, bananas, potatoes and any other bulking foods! So I broke the rules a bit with this but I grilled venison steak, boiled sweet potatoes after peeling them (less fiber and easier for my belly to break it down) and sauteed mushrooms. I topped the potatoes with cinnamon, tumeric and ghee (all anti inflammatory toppings!)
After on Friday having completely nothing in my system...I totally went all out and had pizza. NO regrets. and thank the lord for no belly pain! Eating stuff other than SUPER BLAND was so so good.
So what is on the agenda for this coming week!? First up I'm trying a new recipe after being inspired by Simply Taralynn's Blog I decided to make my own version of this soup
If it turns out I'll share the recipe!
On my trip to the grocery store this is what was on my list!
Produce: zucchini, onions, red pepper, carrots, sweet potato, frozen butternut squash
Meat: chicken breasts, fresh turkey from the deli
Snacks: wheat thins, chicken in a biscuit crackers, tortilla chips, guacamole, greek yogurt for B, halo top (my current fav!)
Staples: eggs, unsalted butter and brown sugar for baking, chicken broth
