So excited that it is GARDEN SEASON. I seriously LOVE all the fresh produce and of COURSE I have to try to grow my own too. I've planted peppers (jalapeno and green), tomatoes (two types of cherry and roma), basil, spinach, romaine, egg plant, peas, onions and zucchini!
Which brings me into tonight's meal.. ZOODLES! Have you gotten yourself a spiralizer yet? If not..what the heck are you waiting for? Turning veggies into noodles is fun...and SO delish! The one I have is called a "veggetti" - goofy name and inexpensive, but it works wonderfully.
Here is a quick meal you can make in under 20 minutes! Packed with protein, lots of greens and is customizable to use up all the produce and meat in the fridge...enjoy!

Quick tips to make it even faster.
Chicken: rotisserie chicken from Costco! Only $4.99 - At the beginning of the week I "prep it" by shredding it and having it ready to go in the fridge to have on hand for wraps, sandwiches, salads and this recipe!
Steaming veggies can be quickly done by chopping and adding to a cereal bowl and put in the microwave for about 2 minutes or until boiling - then remove and rinse with COLD water - this way the veggies don't get mushy (and you only dirtied a bowl and didn't have to use a pan on the stove!)
Sauces: you can top with ANYTHING! I of course prefer anything and everything spicy - but you could choose a salad dressing and lightly drizzle it or even just eat it plain.
