I have been seeing cauliflower everything for quite some time now - my last Trader Joe's run (yes...the closest one is nearly 4 hours away!) I picked up a couple bags of frozen cauliflower rice to give it a go. I've been pleasantly surprised and although B calls it "the weird rice" he does eat it.
Cauliflower Rice Stir Fry with Chicken and Shrimp
Ingredients I used (can be easily subbed for what you have on hand!)
- 1 bag of frozen cauliflower rice
- 1/2 of an onion chopped
- about 15 snap peas (ends trimmed)
- 2 cups fresh broccoli
-about 2 T EVOO
- pepper, minced garlic
-low sodium soy sauce
-sesame seed oil
- worstershire sauce
- already prepared chicken breasts
- medium thawed cooked cocktail shrimp
In a wok on medium heat heat up the EVOO and add about 1 T of minced garlic. Add onions, broccoli and pea pods to the hot pan. Add a few splashes of the soy sauce, sesame seed oil and Worcestershire sauce and stir continuously flipping the veggies. After about two minutes add in the frozen cauliflower. Sprinkle with pepper and preferred seasonings and continue to stir and cook. Cook until the veggies and cooked but not mushy and the cauliflower is a light brown color. Add additional sauce and oil as needed but the frozen cauliflower does add moisture. Serve the rice and veggie mix with whatever protein you have on hand! I thinly sliced some baked chicken breast and added shrimp too! Enjoy!
